The Fermented Food Evidence

One of the more striking recent trials came from Stanford. Thirty-six healthy adults were randomised to either a high-fermented-food diet or a high-fibre diet for ten weeks. According to Stanford Medicine's report on the study, the fermented-food group showed an increase in overall microbial diversity and a decrease in 19 inflammatory proteins, with larger servings producing stronger effects. The high-fibre group, unexpectedly, showed stable diversity over the same period — the researchers concluded that increasing fibre alone over a short window was insufficient to shift diversity.
