Digestive enzymes break down the carbohydrate, protein, fat and fibre in food. Amylase, glucoamylase, maltase and invertase act on carbohydrates; protease and DPP-IV on proteins including gluten and casein; lipase on fats; lactase on milk sugar; and cellulase, pectinase and xylanase on plant fibre. Thera-blend enzymes combine several strains of each enzyme so activity is maintained across the digestive tract's pH range. The live bacteria are shelf-stable.
